Παράλληλα, αναδεικνύονται τεχνικές συντήρησης και μεταποίησης, καθώς και η ανάπτυξη προϊόντων υψηλής ποιότητας και σύνθετων γαστρονομικών πρακτικών. Ο τόμος προσφέρει διεπιστημονική προσέγγιση στη μελέτη της καθημερινής ζωής και του υλικού πολιτισμού του ύστερου Βυζαντίου. This volume brings together the proceedings of the two-day academic conference held in Mistras on November 24–25, 2023, and examines aspects of urban diet and the social practice of banquets during the Palaeologan period. It includes 16 studies that explore perceptions and attitudes regarding diet in the Despotate of Morea, as well as practices of food production, distribution, and consumption, through historical and literary sources, manuscripts, iconography, and archaeological data. Emphasis is placed on the factors that shaped dietary patterns, such as population mobility, trade, and socioeconomic developments. At the same time, it highlights preservation and processing techniques, as well as the development of high-quality products and sophisticated gastronomic practices. Against a backdrop of seigneurial authority, intermittent violence, political change, and emerging economic opportunity, it examines how individuals and families navigated legal ambiguity and shifting power structures to redefine their position within the colonial order. Centred on a 1425 legal dispute before the ducal court of Crete, in which Zorzis Levounis was accused of villeinage by the Venetian patrician Biagio Venier, the study reconstructs the contested history of the family’s origins and status. It traces their trajectory from alleged servile dependence to mercantile affluence and local prominence, highlighting the strategic use of commerce, litigation, and self-fashioning in their pursuit of upward mobility. Rejecting assumptions of institutional rigidity or linear ascent, the paper argues that social mobility in the Aegean islands under Latin rule was contingent, performative, and repeatedly subject to contestation. This edited volume is a contribution to the study of society and the various social groups in Byzantium. As Byzantine society is now a major field of research, this volume brings together some of the studies presented at the conference entitled “‘Social’ Profiles and ‘Social’ Groups: Perceptions of Social Position in Byzantium”, held at the Institute of Historical Research of the National Hellenic Research Foundation in 2014. The researchers contributing to the volume present aspects of society and the representation of different social groups in Byzantium (upper classes, merchants, monks, peasants, the ‘demos’ of the cities) in the sources. There is also an analysis of the social theory of the Church as it appears in philosophical-theological sources of the late Byzantine period, as well as two studies on the projection, or general representation of social position in art. These notes are among the longest and perhaps the most interesting of the few such writings that have survived from Byzantium, constituting a source of the greatest value for the study of the society and the economy of Thessalonike in the 1350s. Known since 1991, when they were published by Peter Schreiner, they have received little attention and have remained largely misunderstood. This chapter reexamines the notes of Kasandrenos in the light of new readings and information coming from documents published in Vatopédi II and Vatopédi III. A new edition and annotated translation of the text are given at the end.
